Cast Iron Dutch Oven or a Roasting Pan with rack.
Ingredients

Chicken

Stick
Butter or Margarine (room temperature)
You can use olive oil if you prefer, but I use plant butter made from olive oil.

Limes
Cut in half

Fresh Garlic Cloves
Peeled
Salt and Pepper
Instructions
Place the limes and the garlic inside the chicken cavity
Rub the butter or olive oil all over the skin of the chicken
Sprinkle with a generous amount of salt and pepper all over
Place chicken directly in the bottom of a cast iron dutch oven, or on a rack inside a roasting pan.
Bake in a preheated oven for approximately three hours at 300 degrees. Low and Slow
If baking in a roasting pan on a rack, be sure to baste the chicken every thirty minutes so that it does not dry out.
